Not sure if it'll go with the cookies, but....
Has anyone had Puerto Rican Rum Punch? Made it over the holidays and it is
"delish"! Kind of like a Pina Colada but not as sweet and it's spicier.
Not hard to make either, it's the waiting that's the hard part ;^)
1 cup water
12 whole cloves
2 cinnamon sticks
1" piece fresh giner, peeled
1 (15oz) can Coco Lopez Real Cream of Coconut
1 (12 fl. oz) can of Carnation Evaporated Milk
1 cup rum
1 sprinkle ground cinnamon
PLACE water, cloves, cinnamon sticks and ginger in small saucepan; bring to
boil over medium heat. Remove from heat; cover. Cool for 15 minutes.
Remove cinnamon stick, cloves and ginger piece.
PLACE cream of coconut, evaporated milk, rum and cooled spice water in
blender container; cover. Blend for about 30 seconds or until well blended.
Refrigerate in glass container or bottle for at least 2 hours or until well
chilled. Shake well before pouring.
TO SERVE: Serve in apertiff glasses for a 2-ounce serving (aw heck, just
fill a big glass over crushed ice). Sprinkle with cinnamon powder if
desired.
TIP: Place one or both of the used cinnamon sticks in the bottled coquito
for extra spice.
Makes about 5 servings.
