Hank,
It's so tempting to step into the middle of this one, but I just don't
have the time.
As a type, I love Eastern NC best of all because it's so unexpected if
you don't come from there. But some of it is better than others, and
you probably never tasted the best stuff.
But I must say, my favorite joint in the whole world is Clark's Outpost
in Tioga, Texas. I've driven hundreds of miles out of my way to stop
by, and never regretted it. I'm looking forward to going there again,
since the Texas board of something or other shut down their ability to
ship it all over the world. Never followed that up, and am still hoping
they can ship again.
When I barbecue (and yes, I do it a lot--more on that when I have time)
I always use Clark's sauce and rub which I keep on hand at all times,
buying it by the caseload. You should have been here for my
Thanksgiving turkey! It was a big bird, and there was none left. Guess
it's time to make another one.
To Ed, and Brad, and others who have suggested other places, one of my
projects for this summer is comparing the sauces and rubs from the
places you have suggested against the Clark's standard. I'll let you
know how that comes out next winter. I should be done with anchors by then.
