I looked, too, and thought I would come right up with them, but didn't, 
either.

I'll also either take or find.

The mental picture you have is correct, though. 

No holes to drill.  Mount the remote on a block of wood.  Put a clamp on 
the other side of the piece of wood.  Clamp the remote to the rail in a 
place comfortable for where you will be sailing from.  (You've got to 
love that grammar!)

The expensive cables are so flexible they are really amazing. 

I lead mine completely outside the cockpit, around the stern rails, then 
a sharp 90 degree turn to the motor, and a second 90 degree turn in the 
same place, but a different plane (think in 3D, not 2D)  when the motor 
slides down the track.  At first the cables are a little stiff, but as 
they bend into position with use they clear all the mounts and work 
flawlessly.

I started with longer cables and tried different positions all over the 
boat.  I love where they are now.  It is not important that they be 
perfectly comfortable all the time (although mine are) -- the only thing 
important is that you are able to quickly and reliably change motor 
settings when you need to do so.  It's not like the throttle or gear 
shift on your car which must be close at hand and foot at all times.
