The Annapolis Book of Seamanship by John Rousmaniere.  Has nothing to do with Annapolis.  Currently in it's third edition.  Lots of books with more information, and lots with less.  This one has most of the things you need to know, and is very readable.  Great book for new sailors.  I consider myself very thorough; everyone else considers me very anal.  I asked around and then went to Borders and scanned all the books on sailing.  There are other good books out there.  Kind of depends on what you're looking for.  I highly recommend Sailing Small, a collection of chapters from small sailboat owners, edited by Stan Grayson.  Chapter 5 is written by this list's Mary Lou Troy, and is a must-read for anyone interested in a Rhodes22.  If you're into the classics, Sailing Alone around the World by Joshua Slocum is well worth the time.
