I read a rule of thumb somewhere that said to choose a prop for an 
outboard to drive a sailboat you want the "largest diameter, lowest 
pitch" prop the manufacturer recommends.  There's a good selection 
chart for Tohatsu motors at

For the T8 that would be an 8.7" prop with a 5" pitch.
