I'll be making a trip to Bed Bath & Beyond for that adjustable shelf. It would serve me fine. I'm finding that organizing a boat can be a challenge.
Oh, I should let you know that I was able to get my hands on a copy of "Sensible Cruising: the Thoreau Approach" It was a great read. Also enjoyed a few of Lin and Larry Pardey"s books.

Talking to you and others and looking at your boat improvement pictures causes my "to do List" to grow. It is fun though, because you find yourself always trying to figure out how to store and access things easier. Looks like keeping the boat home is the first step in making a dent in the projects list.

The shelves have worked really well but one reason we put everything
in containers is that things tend to slide to the back of the shelves
toward the side of the boat. If we didn't have stuff stowed in that
open space, the small container might go over the edge. The other is
big enough so it won't.
One of the nice things about the utensils in containers on the
shelves is that they are.. um... contained. There are only two places
to look to find things and they are easy to restow. Also easy to
bring home and really wash after a long cruise.
The shelves themselves were marketed as "adjustable undersink storage
shelves" in the kitchen area of Bed Bath & Beyond or Linens n Things
many, many moons ago.
The pantry idea (the small rubbermaid container for spices and cans)
works but things tend to get lost in it even though it's a small bin.
It doesn't help that we also use it in the travel trailer so I always
seem to be repacking it for one or the other. I'd have one for each
but I'd never use up all the spices before they turned stale. It does
make it easy to bring those things home and resort them.
Fred added the second shelf (the bookshelf) in the head. There are
screws with eye heads on either end so we can attach a bungee to keep
the books and charts in place. One of the dry bags also has manuals
for most of the equipment on the boat.
The aphorism may be "a shelf in the head is better than a duck in the
lazarette" - or something like that.
