Thats a good idea to mount a table mount to the bottom.
My montego 25 had a pressurized princess double burner and a magma charcoal grill on the stern. I used the grill a lot but the princess was cantankerous! I have been looking at a single burner origio non pressurized alcohol stove and a percolator. Sailboats seem to run on coffee and wind.
