Brooks, I would not leave my Bimini out while at the mooring unless it's just an overnight and I'm sure I'm going back the next day. I'd rather avoid the stress on all the connection points and the shortened life due to UV, not to mention what could happen in a severe storm with that kind of extra surface. You can wax the cockpit once or twice a year and address any UV damage there.
I also leave my Bimini rolled up with its cover on, standing upright tied to the boom. That also secures the boom and reduces wear on the main sheet block and shackles.
I leave my anchor attached to the chain and rode in a plastic milk crate in the lazerette. I leave a second anchor on the bow pulpit and carry a second rode if I'm going to be doing more than s day sail. Any anchor rode you buy will come with a loop at one end. I suggest buying a galvanized shackle and using seizing wire to tie it so the pin doesn't come loose. I think It's easier to just carry it forward and back than it is to mess with reattaching the shackle and storing the rode up front.
