I think that you need to secure both ends as I have seen the stays twist themselves loose, especially the forestay (when the roller binds). The potential damage if the furling jib were to come loose is significantly greater than the inconvenience of removing or replacing the ring. Since my Rhodes is moored in the Nissequogue River and not in daily view, the loss of multiple stays could happen over a period of time or during a bad storm without my knowledge, setting the stage for a disaster.

I have used D-rings and tape. Easier to get on and off for adjustments.
As Chris mentioned you only need to cotter/secure one end of the turnbuckle.
