Slim,

Actually, your two-stroke is just as happy at full
throttle, if not happier, than at 3/4 or 2/3 throttle.
Noise level is another matter.
Chances are the prop you have was sized by the
manufacturer to allow the engine to achieve max RPM
and no more.  The pitch "should" be stamped on the
prop but if it isn't look for a part number and
cross-reference it with a chart off the net. 

Now as to the C&C 24, just being two feet longer gives
it some advantage already.  Also, most of the C&C
hulls were optimized for racing. Hope you feel better.
