Joe,

There are many sources of information.  A whole bunch of people are making a
living selling coastal information.  They use collective resources to make
advertizements to get you to spend money with them.

You will have to do some arm chair cruising.  Buy a copy of  "A Gunkholer's
Cruising Guide to Florida's West Coast" by Tom Lenfesty.  Let us all know if
it is any good.

and see if he has any information that helps you.  Also note that he sells:

After you get a copy of that, let us know if it is any good.

Now if you visit the area you mention, in local fishing supply stores or
boating stores you will find several good maps of the local area designed
for fishing.  For example I have a copy of a map called Boating and Angling
Guide to St. Joseph Bay and Gulf County and another map called Boating and
Angling Guide to Apalachicola Bay.  These were obtained locally in
Apalachicola environs.  

Also there are several of the waterproof plastic maps with details of
channels, depths, waypoints, etc.  I have a copy of one such map by Top Spot
of Pasadena, Texas.  It covers Port St. Joe to Apalachicola, Carrabelle to
Lighthouse Point.  It is Map # N230.  It gives you boat ramps, where to
fish, much detail...

Make sure you take your fishing pole for when the wind dies down or you want
to catch your own dinner.
