Hank,

Marine grade plywood is good stuff.  Trick:  After you have sized it, treat
it with penetrating or thin epoxy, especially the ends.  Sealing the ends
helps prevent moisture damage.

Starboard would be good but a lot more expensive.
  
A local supplier or boat yard may sell you a partial sheet.

On an older boat, you do not top of the line.  A good quality paint hides
much.
