I'm not a Rhodes sailer yet, but this sounds general. A large class of
sailboats will, if the sails are balanced well, sail on a reach to a beat
for a long distance without touching the tiller/ wheel. On a broad reach to
a run, I think all sailboats will change course if no one is steering them.

It's also common for single handers to use an autopilot, holding a course on
any point of sail.

On the Nonsuch site I used to participate in, there was a long discussion on
the subject of going overboard. The bottom line from some highly trained and
very experienced participants was: take every precaution you can to avoid
going overboard whether single-handed or Octuple handed. Going overboard, no
matter how many people are on board, no matter how well-trained they are, or
how much equipment they have, greatly reduces your chances of sailing
another day.

With all sail handling controls available in the cockpit, there's virtually
no reason to go overboard in a Rhodes 22. One of the reasons I'm very
attracted to it.
